It’s always a fun challenge to come up with healthy and tasty meals. I knew I wanted to make a casserole—in Minnesota we call those bad boys “hot dishes”—and to keep it simple. Looking about for ingredients I pulled a package of frozen tortellini from the freezer. While the pasta boiled, I went to the garden and picked handfuls of fresh tomatoes and basil. I chopped an onion and tossed it in the pan with hamburger and garlic. The smells were intensely fragrant. Once the tortellini was ready I combined it with the chopped tomatoes, basil, and meat mixture. I sprinkled flakes of parmesan cheese over the hot dish and baked it in a slow oven to meld the flavors. When I served it to my husband I drizzled a bit of white truffle oil over the top of the melty cheese, tender pasta, and succulent tomatoes. It was over the top delicious, simple, and the best part of my day.
