If you look under my In-10-tions videos, you’ll find the interview I did with Eva some time ago. We had been classmates in college, learning about various approaches to integrated and holistic healing and living. Eva discovered a deep interest in reflexology and naturopathy. Her path took her interesting places, and I delighted whenever we had the chance to catch up.
She used to say to me, “We should start a bakery together!â€Â Eva made delectable Swedish baked goods and brought them occasionally to class. I would make my secret recipe chocolate chip cookies, carrot cake, or brownies. Between us our classmates had reason to smile. A lot.
Imagine my joy and surprise when I recently learned Eva and her husband, Fari, have, indeed, taken ownership of a bakery. Called the Swedish Crown Bakery in Anoka, Minnesota, they are receiving rave reviews for their from-scratch offerings. Eva’s interest in real foods, her understanding of health, happiness, and wellness, will take them far. I feel incredibly proud of her. She’s been following her dreams and inspiring others along the way. Hearing of her success? It is the best part of my day.
